Kishimen (Flat Noodle)

Kishimen is a broad and flat noodle often seen in the Nagoya area. The broth is somewhere between the Kanto style and the Kansai style, with a touch of sweet sake seasoning. Dried bonito shavings are tossed on the dish before serving. Thinly-sliced kamaboko steamed fish paste, boiled and seasoned spinach, and deep-fried bean curd are among regular ingredients.

How to boil Kishimen?

Pour the water into a pan. Bring to a boil and add the dried kishimen. Follow the cooking instructions on the bag (it is usually best to boil for 3 minutes on high heat and 9 minutes on medium heat.)

After boiling, drain the noodles in a colander and quickly run cold water over them.

Because too much starch and salt on the noodles can make them taste slimy, wash them under cold running water to remove any extra starch.

Drain again. After cooking, 200 g dried thick noodles becomes about 530 g cooked noodles.

Kishimen pie

A light and crispy snack, kishimen pie is modeled after Nagoya’s famous flat noodles. You can taste a soft sweetness which even emanates from the package.
