1 About Stir-fry eggplant and two color-sorts of bell peppers with the chilies

A lot of vegetable gathering in summer has an effect of reducing your body-heat. And colorful stuff can foster an appetite which tends to decline during hot days.

 

2 Ingredients of serving four portions

 

One piece of medium eggplant

Two pieces of green bell peppers

Two pieces of red bell peppers

15g~30g (1~2tbsp) of sesame oil

 

The sauce below

 

15g (1tbsp) of sugar

30g (2tbsp) of Mirin which is the sweetened sake

22.5cc (1.5tbsp) of soy sauce

A moderate amount of Shichimi which is a common Japanese spice mixture containing seven ingredients.

 

3 The recipe for Vegans by Japanese style

– Cut eggplant into shapes of half circles in the width of 1.5cm slices, and cut the both bell peppers into the width of 1cm slices after removing the stem ends and its seeds.

– Put the sesame oil into the pan and stir-fry cut-eggplants and cut-bell peppers. Pour the sauce into the pan after well cooked.

 

– Simmer them with stirring until all the juice evaporates.

Finally, add and sprinkle the Shichimi.

Then it’s done.

 

4 Summary

Eggplant’s skin has the components which prevents internal growing old by antioxidative effect. It’s better to use the skin at the time of cooking.

Bell pepper has lots of various vitamins which are helpful for recovery from fatigue.

It usually happens to remain its seeds inside at the time of cutting though, don’t take them away thoroughly and use them as they are intentionally. Because it can be expected preventing the poor circulation due to cold.
