What we call “gari” is ginger.

In Japan, they always eat “gari” with sushi.

“Gari” is cutting ginger into thin slices, and being in sweet and sour pickles. It is a good texture of the teeth touch, is refreshing and the pungent and sweet and sour taste.

There is some theories . One of that , the origin of being called “gari” is its texture be skinny, in Japan sounds like “garigari”.

And the other theory is the sound when you shave a ginger with a knife.

The theories is surprisingly simple, I think.

3.The role of “gari”

The idea of most Japanese, when you eat sushi, “gari” is intended to eat as refreshing a stinking fish taste, not the sushi topping. In particular, it is effective after eating, such as saury fish, horse mackerel, mackerel , which is referred to as the blue fish.

And other role is that the ginger has become “gari” of material, there is a strong bactericidal effect.

Component called gingerol that becomes a source of hot flavor that is included in the ginger, because there is makes an effort to remove organisms prone bacteria.

And more, some Japanese who lovely like to eat sushi use  “gari” as a brush to put the soy sauce. That case is only you eat the Gunkan sushi.

Gunkan: Sushi made by wrapping rice with dried seaweed around its perimeter.
