How to cook “Sumeshi”-Sushi rice.
This is introducing how to cook basic “Sumeshi” as the vinegared rice.
It’s available for any type of sushi like roll sushi or chirashi sushi and so on.
By using this recipe, let’s make the original sushi.
IngredientsRice- 2 cups
Water- 360cc or fewer
Kombu “sea weed for soup”- 5 cm
Sugar- 2 spoons and half
Salt- a half of spoon
Vinegar- 3 spoons and half
Boiling riceＷash the rice and put in a colander and put a 30-minute in them.
Transferred them to a kettle and put 360cc of water.
Put the kombu on the rice.
Put the rid and boil them with low heat in 15-20 minutes.
Mix themAt first, put sugar, salt, and vinegar in the cup and mix them.
Put the boiled rice in wooden vat or wide plate, then put kombu out.
Above the rice, put mixed vinegar radially.
Cut the rice using rice paddle to spread vinegar to the whole.
It is preference, if you are fanning them then. Rice will come out shiny.
Gather the rice in a corner of it.
Cover them by a moistened kitchen paper or gauze. and rest about 10 minutes.
TipsWhen you boil the rice, fewer than 360cc of water is better.
To cook delicious Sumeshi, please cut the rice quickly and don’t make them wetly.
Rice including too much wet is bad taste.
Therefore, fanning them when you cut the rice and using wooden vat is suitable because it absorbs moisture.
You can cook any type of sushi like roll sushi or chirashi sushi by using the Sumeshi.
